Vegan Vanilla Walnut Cookies topcook.tomathouse.com
Ingredients:
- 1.5 cups premium wheat flour
- 0.75 tbsp. confectionery flour (low gluten flour 8-9%)
- 3 tbsp. l. tapioca flour
- 2 tsp baking powder
- 0.5 tsp fine salt
- 0.5 tsp xanthan gum
- 1.5 cups vegan sugar or organic unbleached cane sugar
- 0.5 tbsp. apple sauce
- 0.5 cups raw organic coconut oil, melted
- 3 tablespoons grape seed oil
- 2 tsp vanilla extract or 2 vanilla pods, seeds scraped out
- 0.5 tsp apple cider vinegar
- 1.5 cups chopped walnuts
Preparation:
- Preheat oven to 190°C. Line a baking pan with parchment paper and set aside.
- In a medium bowl, whisk together flour, baking powder, salt, and xanthan gum.
- In a large bowl, combine the sugar, applesauce, coconut oil, grapeseed oil, vanilla, and vinegar and beat on low speed for about 1 minute. Add the flour mixture to the bowl with the wet ingredients and mix well, adding 1/3 cup of water if needed. Stir in the chopped nuts.
- Drop heaping tablespoons of dough onto the baking sheet, spacing them 2.5-3 cm apart. Bake the cookies in two batches, two baking sheets at a time, until the dough is set and beginning to brown around the edges, 18-20 minutes.
Remove from the oven and let the cookies cool on the baking sheets for 2 minutes, then transfer to a wire rack and let cool completely. Bake the remaining cookies as directed above.
