Ingredients:
- 450 g tomato, cut into 0.5 cm thick slices.
- 1.5 cups of vodka
- Salt
- 16 small-fruited tomato varieties such as cherry or grape
- 2 tbsp. balsamic vinegar
- 1/2 bunch basilica
- 8 small balls of Bocconcini mozzarella cheese
Preparation:
- Prepare tomato vodka: Place the chopped tomatoes in a deep bowl, pour in the vodka, and add a pinch of salt. Let the vodka and tomatoes infuse at room temperature for 6 to 12 hours. Then strain the vodka into another container and chill until serving.
- Meanwhile, marinate the tomatoes: Pierce the tomatoes with a skewer, place them in a bowl, and pour balsamic vinegar over them. Let them marinate at room temperature for 4 hours.
- Prepare balsamic syrup: Pour the balsamic vinegar into a saucepan and bring to a boil. Reduce the heat to low and simmer until thickened, about 20 minutes, then cool.
- Prepare a cocktail: Pour a little balsamic syrup into a chilled martini glass. Place 2-3 basil leaves in a shaker, add 50 ml of tomato vodka and 1 glass of ice. Shake the shaker and strain the cocktail into the glass. Thread 2 marinated tomatoes, 2 basil leaves, and a ball of mozzarella onto a skewer and garnish the cocktail.
