Traditional meatloaf

Ingredients:

  • 1.1 kg ground beef (85% lean, 15% fat)
  • 1 tbsp. l. olive oil
  • 3 cups chopped onion (3 onions)
  • 1 teaspoon chopped thyme leaves
  • 2 teaspoons of salt
  • 1 teaspoon ground black pepper
  • 3 tablespoons Worcestershire sauce
  • 1/3 cup chicken broth
  • 1 tbsp tomato paste
  • 0.5 cup bread crumbs
  • 2 very large eggs, beaten
  • 0.5 cups ketchup

Preparation:

  1. Preheat oven to 160°C.
  2. Heat the olive oil in a medium saucepan. Add the onion, thyme, salt, and pepper and cook over medium heat, stirring occasionally, for 8-10 minutes, until the onion is translucent but not browned. Turn off the heat, add the Worcestershire sauce, chicken broth, and tomato paste. Let cool slightly.
  3. In a large bowl, combine the ground meat, onion mixture, bread crumbs, and eggs and lightly mix with a fork. Don't overmix, or the meatloaf will be too dense. Form the mixture into a rectangle on a parchment-lined baking sheet. Spread the ketchup evenly over the top.
  4. Bake for 1 hour to 1 hour 15 minutes, until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through (a pan of hot water in the oven under the meatloaf will prevent the top from cracking). Serve hot.
