Peach Crisp

Ingredients:

    Topping

  • 1 and 1/4 cups premium flour
  • 0.5 cups oatmeal
  • 0.5 cup brown sugar
  • 0.5 cups of sugar
  • 150 g cold butter, cut into pea-sized pieces
  • 0.5 cup almond petals
  • A pinch of salt
  • 1 - 2 tablespoons of cold water
  • Special equipment: 6 ramekins, 180 ml each.

    Filling

  • 5 large ripe peach, pitted and cut into pieces
  • Juice and zest of 1 lemon
  • 3 tbsp. premium flour
  • 1/4 cup brown sugar
  • 2 tablespoons of sugar
  • 0.5 tsp vanilla extract
  • 0.5 cup white raisins
  • A pinch of salt

Preparation:

  1. FillingIn a large bowl, combine the peaches with the lemon juice and zest. Add the remaining ingredients and mix well. Divide the filling evenly among the ramekins.
  2. Preheat oven to 170°C.
  3. ToppingPlace all ingredients except water in a food processor. Blend for 30 seconds. Add water 1 tablespoon at a time until the mixture comes together but doesn't crumble.

    Spread the topping evenly among the ramekins, without pressing it down. The crispness should appear bumpy.
  4. Place ramekins on a baking sheet and bake for 20 to 25 minutes, or until filling is bubbling and topping is golden brown and crisp.

    Crisp is best served with vanilla ice cream.
