Lobster-Stuffed Eggs topcook.tomathouse.com
Ingredients:
- 6 hard-boiled eggs, cut in half lengthwise and remove the yolks
- 120 g cooked lobster meat, cut into pieces
- 1 teaspoon Dijon mustard
- 1 tbsp. l. chopped shallots
- 2 tablespoons mayonnaise
- 1 tbsp. capers
- 1 tbsp. l. chopped chives, and more for sprinkling
Preparation:
- Mash the yolks into a paste, add the lobster meat, mustard, shallots, mayonnaise, capers, and chives, and stir. Fill the egg whites with the mixture and sprinkle with plenty of chives.
Serve the dish as a snacks.
