Grilled duck breast with spices

Ingredients:

  • 1 tbsp. l. smoked paprika
  • 1 teaspoon garlic powder
  • 1 tsp ground cumin
  • 1 teaspoon chili powder
  • 0.5 tsp 5-spice seasonings
  • 0.5 tsp dry mustard
  • 4 duck breast halves
  • Vegetable oil, for frying

Preparation:

  1. In a bowl, combine smoked paprika, garlic powder, cumin, chili powder, five-spice seasoning, dry mustard, and a little salt and black pepper. Using a sharp knife, score the duck skin to create a 0.5 cm mesh pattern. Rub the spice mixture all over the duck.
  2. Preheat the grill to medium heat (don't let it get too hot, as the duck will cook slowly to render the fat) and wipe the grates with a paper towel dipped in vegetable oil. Place the duck skin-side down on the grill and grill until seared and the fat has rendered, 4 to 5 minutes. If the drippings flare up, move the duck to a different area away from the heat. Turn the duck over and transfer it to a cooler area of ​​the grill. Grill for another 5 minutes for medium-rare. Let rest for 5 to 7 minutes, then slice across the grain into thick slices.
