Hot dogs with cheese and chili and chipotle sauces topcook.tomathouse.com
Ingredients:
- 2 strips of bacon, chopped
- 1 small onion, finely chopped
- 2 tsp chili powder
- 1 tsp ground cumin
- 3 tablespoons ketchup
- 1 can of pinto beans (425g), drain and rinse
- 1 can diced tomatoes (410g)
- 3 tbsp chipotle hot sauce, save a little extra for dressing
- Vegetable oil for greasing the grill
- 4 sausages, about 30 cm long.
- 4 soft hot dog buns, cut in half lengthwise
- 110 gr. or 1 tbsp. grated cheese with pepper
- Chopped green onions and/or sour cream for dressing (optional)
Preparation:
- Place the bacon in the skillet and cook for 3-4 minutes until crisp. Add the onion, chili powder, and cumin and cook for 3 minutes, until the onion is soft. Add the ketchup and stir. Cook for another 2-3 minutes, until the ketchup is light brown. Add the beans, tomatoes, chipotle hot sauce, and 1 cup of water. Cover and bring to a simmer. Remove the lid and stir occasionally until the mixture thickens, about 20 minutes.
- Meanwhile, preheat the grill to medium and brush the grates with vegetable oil. Grill the sausages for 10 minutes, turning occasionally, until they are free of grill marks. If desired, place the hot dog buns on the grill and grill until crispy.
- Sprinkle a little cheese inside each hot dog bun, place some sausages in them, and sprinkle some cooked bean chili mix and a little more cheese. Top with green onions, sour cream, and/or hot sauce if desired.
