Oatmeal with pumpkin on water topcook.tomathouse.com
Ingredients:
- 2 cups of oatmeal
- 400 gr. pumpkin puree
- 2 tbsp of water
- 2 cups unsweetened almond milk or water
- 2 tablespoons raisins
- 1/4 teaspoon salt
- 3/4 tsp pumpkin pie spice or 1/2 tsp cinnamon, 1/4 tsp ground cardamom, 1/4 tsp ground cloves
- 1/4 cup pumpkin seeds
- Honey or maple sugar for serving
- Whipped cream
Preparation:
- In a large saucepan over high heat, combine pumpkin puree, water, almond milk, raisins, salt and seasoning. Bring to a boil.
Add the oats. Reduce heat and simmer for about 15 minutes, stirring frequently.
- In a small cast-iron skillet over medium heat, toast the pumpkin seeds until fragrant and golden brown, about 10 minutes.
Once the oatmeal is cooked, serve it with honey or maple sugar, pumpkin seeds, and whipped cream.
