Ingredients:
Fried asparagus
- 1 bunch (about 450 g) asparagus, tough ends trimmed, stems cut in half
- 1 cup chilled lager beer
- 1/2 cup mayonnaise
- Zest and juice of 1 lemon
- 1 small clove of garlic, grated
- 1 cup flour
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- Vegetable oil for deep-frying
Chili Lime Relish
- 1 tbsp. chili powder
- 1/2 tsp salt
- Zest of 1 lime
- Mix in a separate bowl
Pepper and Parmesan Seasoning
- 1/4 tbsp. grated parmesan cheese
- 1/2 tsp ground black pepper
- Mix in a separate bowl
Old Bay Seasoning
- 1 tbsp seafood seasoning, such as Old Bay
Preparation:
- Pour 2 inches of vegetable oil into a large heavy-bottomed saucepan and heat over medium-high heat until a deep-fry thermometer reads 350°F (180°C). Line the pan with paper towels.
- Meanwhile, make the aioli.: In a small bowl, whisk together mayonnaise, lemon juice and garlic.
- In a medium bowl, whisk together the flour, cornstarch, baking powder, and lemon zest. Slowly pour in the beer and stir until smooth. Dip half the asparagus into the batter, turning to coat completely, and let any excess drip off.
- Deep-fried asparagusCarefully drop the asparagus, a few at a time, into the hot oil until all the asparagus is incorporated. Fry for 4-5 minutes, until the asparagus is golden brown on all sides and tender inside. Transfer to kitchen towels and sprinkle with salt and pepper. Repeat with the remaining half of the asparagus and the batter. For the second batch, heat the oil again to 180°C.
- Toss warm asparagus fries with your chosen seasoning and serve with garlic aioli sauce.
