Grilled potato salad with bacon and green onions

Ingredients:

    For the salad:

  • 7 medium potatoes with skin, quartered
  • 1 sweet potato sweet potato, peel and chop coarsely
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/4 tsp ground cayenne pepper
  • Coarse salt and freshly ground black pepper

    For salad dressing:

  • 1 slice of bacon, finely chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 feathers green onions, cut into rings
  • 2 tbsp chopped fresh parsley
  • Coarse salt and freshly ground black pepper

Preparation:

  1. Preheat the grill to medium. Place the potatoes in a large saucepan and cover with cold water by 2 inches. Bring to a boil and cook for 10 minutes. Add the sweet potatoes. Bring back to a boil and continue cooking for another 10 minutes. Drain and let the potatoes cool.
  2. In a bowl, combine mayonnaise, mustard, onion powder, garlic powder, cayenne pepper, salt, and black pepper to taste. Once the potatoes have cooled, stir them into the mixture.
  3. Prepare the salad dressing: Fry the bacon in a skillet over medium heat until crisp, then let it cool slightly. Transfer the cooled bacon and its rendered fat to a large bowl.

    Add olive oil, vinegar, and mustard and whisk until emulsified. Add green onions, parsley, salt, and black pepper to taste, and whisk again.
  4. Place the potatoes on the preheated grill and cook, turning, for 1-2 minutes per side. Transfer the potatoes to a bowl with the dressing and toss. Serve the grilled potato salad warm or chilled.
