Ingredients:
- 2/3 cup grated mature cheese "Cheddar"
- 2/3 tbsp. grated cheese Pepper Jack
- 300 gr. tortilla chips (see recipe below)
- 1/2 cup black beans, without liquid
- 1.5 cups cheese sauce (see recipe below)
- 3 fresh chilli peppers, seeded and thinly sliced
- 1/2 cup guacamole (see recipe below)
- Sour cream, sliced pickled jalapeños, and sliced green onions, for topping
Preparation:
- Preheat oven to 350°F (180°C). Combine cheddar and pepper jack cheese in a bowl. Spread tortilla chips in an even layer on the bottom of a cast-iron skillet or baking dish. Sprinkle with half the cheese mixture and bake until the cheese is melted, about 5 minutes. Top with the remaining tortilla chips, sprinkle with the remaining cheese mixture, and black beans. Return the nachos to the oven and continue baking until the cheese is melted, about 5 minutes.
- Remove the nachos from the oven, drizzle with cheese sauce, top with guacamole, and sprinkle with chili peppers. Top with sour cream, pickled jalapeños, and green onions.
Tortilla chips 6 tortillas, cut into triangles (recipe corn tortillas, recipe wheat tortillas)
Fry the tortillas in vegetable oil in a frying pan until golden brown. Transfer the chips to paper towels and sprinkle with salt.
Cheese sauce Melt 3 tablespoons (45 g) butter in a saucepan over medium heat. Add 1 teaspoon each minced garlic and shallot; cook 5 minutes. Stir in 3 tablespoons flour and 1/2 teaspoon salt; cook, stirring, for 2 minutes. Add 1/2 cup milk and continue cooking until thickened. Add 1 cup cheddar cheese, season the sauce with pepper, and stir until smooth.
Guacamole sauce Mash the pulp of two with a fork avocadoAdd 1/4 cup diced sweet onion, 1/3 cup diced tomato, 4 teaspoons chopped cilantro, 1 tablespoon lime juice, 2 teaspoons chopped jalapeño pepper. Season the sauce with pepper and salt.
